Exploring leaves
Vegetables should form one third of what we eat on a daily basis and green leafy vegetables are vital for a healthy heart, gut and bones, packed with vitamins and minerals. As a general rule, the darker the leaf, the more nutritious it is.
Aside from the usual spinach, kale and rocket there are so many more ways to increase greens into your diet by harvesting from the garden.
Leaves can be added to salads, stews, curries, soups, sandwiches, breads, pastries and even cakes. They can also be medicines, ropes, bowls and cooking vessels.
